This recipe is my take on Larb Gai, a popular Thai dish made from minced protein like Chicken. It’s typically seasoned with fish sauce, soy, lime, and other spices. I love making this dish because it’s an easy weeknight dinner and one that allows for creativity. I love using different toppings to create different bites. What’s even better? The leftovers make for a great salad the next day!

Ingredients:

Spicy Soy Sauce Marinade:

  • 3 tbspns of sweet chili sauce

  • 2 tbspns of sriracha

  • 3 tbspns of soy sauce

  • 3 tbspns of hoisin sauce

  • 2 tbspns of olive oil

  • 1 tbspn of sesame oil

  • 2 tbspns of rice wine vinegar

  • 2 garlic cloves

  • 1/2 tbspn of ginger

For the Ground Turkey:

  • 1 lb of ground turkey

  • 1 red bell pepper, finely diced

  • 1/4 cup of shredded carrots

  • 2 garlic cloves

  • 1/2 onion, chopped

  • 4 green onions, finely diced

  • 1/2 lb of mushrooms, diced

  • 1/4 cup of cilantro, chopped

  • 1 tbspn of ginger (fresh or frozen)

  • Black Pepper to taste

  • 1 tsbpn of oil for cooking

Directions:

For the Spicy Soy marinade, add all ingredients into a small bowl and combine.

Now it’s time to prep the ground turkey. In a large bowl, combine all of your diced veggies, garlic, ginger, and half of the spicy soy sauce.

Heat 1 tbspn of oil in a saucepan, add ground turkey to the pan and cook for 15-20 minutes or until cooked through.

Once cooked, add in the remainder of the sauce and cook for another 2 minutes and remove from heat.

It's now time to plate your dish. Add ground turkey to your lettuce cups and plate with your favorite toppings. Drizzle the dipping sauce for added flavor.

Plating Suggestions:

It's now time to plate your dish. Add ground turkey to your clean/washed lettuce cups and plate with your favorite toppings.

I like to plate mine with some of the ingredients I used to flavor the ground meat- Cilantro, shredded carrots, and red peppers.

For added flavor, I like to dip or drizzle with a quick sweet and spicy soy dipping sauce.
