Shrimp in a Pomodoro Sauce

You know that quick and easy dish that’s packed with flavor and can pair with anything? Yeah, well this is it! It’s a quick and easy meal that’s packed with a bunch of flavor. Pomodoro Sauce is tomato based sauce that’s flavored with sweet basil, herbs, and San Marzano tomatoes. To take things up a notch, I add shrimp to the sauce and use it as a hearty dish with pasta or rice. This dish also pairs well with other rice alternatives, veggies, and can be used on top of other proteins.

One caveat I should add, only, I repeat ONLY use San Marzano tomatoes for this dish. It’s what makes this sauce so great. You won’t regret it! I hope you love this recipe.

Makes 6 servings

Ingredients:

  • 2-3 lbs of wild caught shrimp, tail on and deveined

  • 1 can of San Marzano Peeled Tomatoes

  • 1 bunch of basil, chopped

  • 1/2 cup of parsley, chopped

  • 1 teaspoon of dried oregano

  • 3 tablespoons of sugar

  • 6 garlic cloves, mashed or finely chopped

  • salt to taste

  • 1/2 teaspoon of red pepper flakes (optional)

  • 1 teaspoon of oil, for cooking

Directions :

Wash and chop your basil and parsley. Set aside.

In a large bowl, add your San Marzano Tomatoes, oregano, and sugar. Crush the tomato mixture to a pulp with your hands. A potato masher can be used here as well.

In a shallow pan, heat cooking oil under medium heat. Add in garlic and saute until fragrant. Then, add in parsley and half of the basil. Saute.

Add in sauce mixture to the pan and combine. Cover and let simmer for 8 minutes.

Uncover and add in shrimp. Combine and cover. Let simmer on low or another 8 minutes.

Uncover and add in the remaining basil.

Combine and enjoy!

Notes:

This dish is great alone but can also be paired with the following:

  • Side of rice

  • Can be tossed with pasta

  • Side of steamed vegetables

  • With zucchini noodles

  • Toasted bread
