Chicharrones De Pollo (Fried Chicken Chunks)
There are just certain dishes that make you feel like home! Home can be your native land, the Dominican restaurant around the way, or your momma’s cooking. For me, this dish is all of those things! Chicharrones de Pollo are crispy fried chicken bites/chunks that are served in the Dominican Republic at every rest stop, chicken spot, and even at the beach! The chicken is typically in the form of strips, seasoned to perfection, and then fried in hot oil.
This is a dish that I grew up eating at home, at the Dominican restaurant near my home, and at rest stops near the airport as soon as I touched down in DR. Pollo Victorina used to hit every single time.
This dish is pretty simple and requires simple but delicious ingredients. The key is in the marinade, authentic and great quality oregano, garlic, other spices, and lime juice to balances out the flavors.
Here’s my Chicharrones de Pollo recipe! Trust me, you’re going to love it!
Ingredients:
2 pounds of chicken breasts or thighs, cut into strips or small chunks
5 garlic cloves, mashed
1 tablespoon of garlic
1 teaspoon of onion powder
1 packet of Sazon or 1 tablespoon of All Purpose Seasoning
Juice of half of a lime
Rind of half of a lime
Pinch of Adobo
1 teaspoon of oregano
1 cup of flour, for dredging
Oil for frying
Directions:
The first step is to clean your chicken with vinegar or citrus (ie. lime juice).
Once cleaned, season your chicken with the garlic, spices, and lime juice. Allow to marinate for at least 30 minutes.
Heat oil in a pan on medium to heat heat.
In a bowl, dredge your chicken breasts in the flour.
After dredging, add chicken to the oil and fry until golden brown.
Drain and plate with lime wedges and your side of choice. I like to plate with tostones and/or rice.
