Salmon Cheesesteak Sandwich

When you’re a kid you dream of the days when you’re an adult. All of the things you’re going to do and accomplish and who you’ll want to be. No one tells you that old age comes with ailments, watching what you eat, and responsibilities. Honestly, what was I thinking? It ain’t what it’s cracked up to be lol. Old age brings so many weird and unexplainable shifts. For me, that’s knowing my body and the things I should/shouldn’t eat. Beef is one that I definitely SHOULD NOT be eating. But what do you do when you’re craving a Philly Cheesesteak? Do you just ignore the craving? No ma’am! You find an alternative and you live your best life.

The craving was real so I brainstormed so many options even using beyond meat. I wanted to enjoy the beloved cheesesteak sandwich but without consuming the bad stuff. That’s when salmon entered the cheesesteak chat and it was on from there! This sandwich is super simple and does not disappoint. It’s a one pan meal, still has the same flavors as the cheesesteak you know and love, and is a great alternative.

Make this as a lunch meal or grab some mini rolls and make this as appetizer for your upcoming holiday dinner parties. This sandwich filling would go great in Hawaiian pull apart rolls. Your guests would love them!

Now, let’s get into this yummy sandwich.

Ingredients:

  • 2 Salmon fillets

  • 1 tablespoon of Cajun/Creole spice, I used Home Beis Bayou blend

  • 1 Medium White Onion, sliced

  • 1 Green bell pepper, sliced

  • Salt to taste

  • 1 Teaspoon of oil, for cooking

  • 6 Slices of Provolone cheese

  • 2 Heros or Hoagie rolls

Directions:

Season your salmon fillets with your cajun/creole spice blend and salt. Set aside.

Add the cooking oil to a medium pan under medium to high heat. Then, add in your salmon fillets. Cook your fillets on both sides until you get a nice sear (Don’t worry about cooking the salmon all the way through). The salmon will continue cooking in the next steps. Once your salmon fillets have a nice sear, remove them from the pan and transfer them to a plate.

Then, shred the salmon fillets into chunks by using a fork. Set aside.

Next, add the onions and peppers into the same pan that you used to sear your salmon fillets. Cook until the veggies begin to soften a bit.

Now, add in your shredded salmon into the pan along with the peppers and onions and mix to combine. Once combined, layer your provolone cheese on top of the salmon mixture and cover to allow the cheese to melt.

Once melted, add your salmon cheesesteak mixture into your hoagie rolls and enjoy!
